Bread: Quick Bread

Cherry Nut Bread

1 c. sugar
½ c. oil
2 eggs
1 tsp. vanilla
2 ¼ c. flour
1 tsp. baking powder
1 jar (8 oz) maraschino cherries, drained (reserve juice), and slightly chopped
½ c. walnuts, chopped

Grease and flour two 8x4 inch loaf pans or line with waxed paper; set aside. In large mixing bowl, cream sugar and oil; add eggs and beat well. Stir in vanilla. In separate bowl, mix flour and baking powder. Measure ½ c. maraschino cherry juice, or add water to juice to make ½ c. Alternately add flour mixture and juice to creamed mixture until all ingredients are blended. Stir in cherries and nuts. Pour into loaf pans; bake at 325 degrees for 55 to 60 minutes or until wooden toothpick inserted in center comes out clean. Makes 2 loaves.
