Easy Chicken Cordon Bleu

BBQ Chicken

6-8 chicken breasts
BBQ sauce 
crockpot liner

Line crock pot with crockpot liner.
Place chicken in crockpot. Cover with BBQ sauce. Add about ½ cup water. Put lid on and cook on low for 6-8 hours until chicken is fall apart tender.

Serve with rolls or potatoes.


This is an incredible crepe to eat for dinner. It is filled with chicken, alfalfa sprouts, avocado, tomatoes, and spinach leaves. It is so good for you. It also has some mustard spread down the middle of the crepe.

To your blender pitcher add:
2 large eggs
2 Tablespoons of honey or xagave
1/3 cup of water
2 Tablespoons of butter
1 cup of flour (you can use whole wheat)
1/4 tsp. salt

Blend all ingedients until smooth. It works best if you add you flour gradually. Cover and refrigerate for 1 hour or overnight. You can use sooner but if it makes little holes in it it needs to be refrigerated longer.

Cook in a crepe pan or a smooth skillet, 1/4 c. batter per crepe. Turn when edges start to curl. Place on plate for service.

Possible fillings:

Shredded chicken

You can also make these into desert crepes. Fill it with cream, yogurt, nutella, and/or fruit.

For dessert crepes substitute the 1/4 tsp. salt in above recipe for 2 tablespoons of sugar and 1 teaspoon of salt.
